VEGETABLE KURMA RECIPE

(Step by step procedure with photos)


Preparation Time: 10 Minutes
Cooking Time: 20 Minutes

Ingredients Required:

For Paste: 

1. Grated Coconut- 1 Cup
2. Green Chillies- 4 to 5 no
3. Cashew - 5 no

For Gravy:

1. Oil- 3 to 4 Tsp
2. Bay leaf- 1 or 2 no
3. Chopped Onions- 1 cup
4. Chopped Tomatoes- 1/2 cup
5. Ginger Garlic Paste- 1 Tsp
6. Red Chilli Powder- 1 Tsp
7. Coriander Powder- 1 Tsp
8. Salt - 1 Tsp
9. Pinch of Turmeric Powder
10. Mixed Vegetables(Carrot, Beans and Potatoes)- 1 Cup
11. Coriander leaves for Garnishing



Procedure:

Step 1:

 

1. Add Fresh Grated Coconut, Green Chillies and Cashew nuts into a Mixing jar. Grind them into a fine paste by adding little water.

Step 2: 


1. Heat oil in a pan, Add Bay lead and Chopped Onions. Saute for 2 minutes, until onions turns light pink. Then add chopped tomatoes and mixed vegetables, and saute it for 2 minutes.

Step 3:


1. Add previously grounded paste(Refer step 1). Saute for 2 minutes.

Step 4: 


1. Add Red chilli powder, Coriander powder, salt and pinch of Turmeric powder, and fry it for 2 to 3 minutes.


Step 5:


1. Add a cup of water and give it a stir, let it boil for 2 minutes.

Step 6:


1. Close the lid and cook for 10 to 15 minutes, stir occasionally.

Step 7:  


1. After 10 minutes, turn off the flame and use few coriander leaves for garnishing.


Ready to serve.
Serve it with Roti/ Dosa/ Chapati.
