PREPARATION TIME: 5 MINUTES
COOKING TIME: 20 MINUTES

INGREDIENTS REQUIRED: 

1. OIL- 4 TSP
2. GINGER- SMALL PIECES
3. GARLICS- 5 TO 6 NO.
4. CHOPPED ONIONS- 1 CUP
5. GREEN CHILLIES- 5 TO 6 NO.
6. SPINACH (PALAK)- 1 CUP
7. CUMIN SEEDS- 1 TSP
8. CHOPPED TOMATOES- 1/2 CUP
9. SALT- 1 TSP
10. RED CHILLI POWDER- 1 TSP
11. CORIANDER POWDER- 1 TSP
12. BOILED BABY POTATOES- 1 CUP
13. WATER- 1 CUP

PROCEDURE:

STEP 1:


1. Heat 2 tsp of oil in a pan. Add ginger, garlic and chopped onions and saute it until it becomes light pink. Then add chopped spinach (palak) and mix well.cook for  2 to 3 minutes over medium flame. Turn off the flame and let it cool.

STEP 2:


1. Transfer sauted onion spinach in a mixing jar and make a smooth paste.

STEP 3:


1. Heat remaining 2 tsp oil in same pan. Add cumin seeds and remaining 1/2 cup of chopped onions and saute it for few minutes then add 1/2 cup of chopped tomatoes and cook for 2 minutes. Add salt, red chilli powder, coriander powder and grounded paste. Saute it for 5 minutes.

STEP 4:


1. Add boiled potatoes and mix thoroughly.

STEP 5: 


1. Add 1 cup of water and let it boil for 10 to 15 minutes over simmer. Turn off the stove and transfer curry to a serving bowl.



Serve hot with parata or dosa of your wish.
