The first thing that comes to my mind when I hear Ganesha habba (festival) is sihi (sweet) kadubu. Who doesn't love sweet kadubu ( Banana leaf pancake )?
We prepare this authentic sihi ( sweet ) kadubu only once in a year that is for Ganesha festival. But I don't think that's the reason behind every one loves this sweet dish. Even if anyone prepares daily for me, I will definitely munch without any doubt.

INGREDIENTS REQUIRED:
FOR DOUGH:
1. Water- 1 cup
2. Salt- 1/4th tsp
3. Oil- 1 tsp
4. Rice flour- 1 cup
FOR STUFFING:
1. Grated coconut- 1 cup
2. Jaggery- 3/4th cup
HOW TO MAKE:
1. Grate a cup of fresh coconut. Take it in a hot pan and saute it for a few minutes. Don't over roast it, just make sure that coconut becomes warm.
2. Add grated jaggery and saute until jaggery starts melting.
3. Cook for 2 minutes, now the stuffing is ready. Then keep it aside and let it cool down.
4. Boil a cup of water in a pan, when it's boiling add a tsp of oil and pinch of salt.
5. Add rice flour and start mixing immediately.
6. Stir continuously for a minute.
7. Turn off the flame, cover it with lid and keep it aside for 10 minutes.
8. After 10 minutes, open the lid and knead the mixture. Prepare soft dough, add little water if required. Then you will get a soft non-sticky dough.
9. Grease your hands with oil or ghee and knead it again and take a small ball sized dough.
10. Roll it over a flat surface and make it round in shape.
11. Take a tsp of previously prepared stuffing and place it in the middle.
12. Then fold half and stick the edges together. slightly press the edges by using a fork.
13. Pour enough water in a pan.
14. Place idli stand inside it and keep the greased banana leaf in the middle. Arrange prepared kadubu one by one. Leave some space between one and another.
15. Cover the lid and cook for 10 minutes over a medium-low flame.
16. After 10 minutes, open the lid. Now it's completely cooked.
17. The sweet kadubu is ready to serve.
