Bidiru Kadale Palya | Bamboo Shoots Stir Fry |


    Bamboo shoot stir fry is a traditional recipe prepared by adding lots of chopped green leaves, mixed pulses and some seasonings to the chopped bamboo shoots.
Though it is scientifically not proven, some people believe bamboo shoots causes abortion in pregnant women. Apart from this bamboo shoots are a good source of fibre and it contains potassium which is good for a healthy heart and it maintains normal blood pressure.

INGREDIENTS REQUIRED:

  • Bamboo shoots- Overnight soaked, chopped
  • 3 Tablespoons of Oil
  • A teaspoon of Mustard seeds
  • A teaspoon of Urad dal
  • 1 teaspoon of Chana dal
  • Curry leaves- 1 string
  • 2 Onions- medium size, chopped
  • 2 Green chillies- finely chopped
  • 1/2 bunch of Pumpkin leaves- chopped
  • 1/2 bunch Drumstick leaves- chopped
  • A cup of Mixed pulses- overnight soaked
  • Teaspoon of Salt
  • A teaspoon of red chilli powder
  • A teaspoon of Garam masala powder
  • 1/2 Cup of Coconut, grated

QUICK LOOK OF RECIPE:

1. Pour enough water to cook chopped bamboo shoots in a cooker and cook for 5 to 6 whistles.
2. Heat 3 tablespoons of oil in a pan, add mustard seeds, urad dal and chana dal and curry leaves let it splutter. 
3. Add onions, green chillies and saute it for 2 minutes.
4. Add mixed green leaves, bamboo shoots and mixed pulses and saute it for 5 minutes.
5. Add salt as per your taste and little water. Cover the lid and cook for a few minutes
6. Add red chilli powder and garam masala powder. Give it a good mix and again cook it for 10 to 15 minutes.
7. Lastly, add grated coconut and Enjoy the recipe.

HOW TO MAKE:

(STEP BY STEP PROCEDURE WITH PHOTOS)

1. Firstly peel the rough leaves until you get tender bamboo shoot. Cut off the tip and bottom. Chop them into small pieces and wash 3 to 4 times then Soak them in normal/ cold water overnight. wash 2 to 3 times before use.
now, pour enough water into the pressure cooker. also add overnight soaked and washed bamboo shoots. Cover the lid and cook for 4 to 5 whistles.


2. Drain off the water and rinse 2 times with cold water.


3. Heat 3 tsp of oil in a pan, when it heated add mustard seeds, urad dal and curry leaves and let it splutter for 30 seconds.


4. Add chopped onions, green chillies and saute till onions become translucent.


5. Add chopped drumsticks leaves and pumpkin leaves. Use whichever green leaves are available for you if you don't have this like spinach, dill leaves etc...


6. Add previously cooked bamboo shoots and saute for 5 minutes.


7. Add mixed pulses, here also whichever pulses you like you can add to this. Saute for a few minutes.


8. Add little water and salt as per your taste. Cover the lid and cook for 5 minutes.


9. Add red chilli powder, garam masala and give it a good mix. Cover the lid and cook for 10 minutes over medium flame.


10. Lastly, add grated coconut. And enjoy the recipe.



SERVING IDEAS:

Serve hot with Sambar rice as a side dish.
