Bidiru Kalale Gojju | Bamboo Shoots Curry |


    Bamboo shoot curry is a traditional curry recipe prepared by adding lots of chopped green leaves, mixed pulses and some seasonings to the chopped bamboo shoots.


     Though it is scientifically not proven, some people believe bamboo shoots causes abortion in pregnant women. Apart from this bamboo shoots are a good source of fiber and it contains potassium which is good for a healthy heart and it maintains normal blood pressure.

INGREDIENTS REQUIRED:

1. FOR MASALA PASTE:

 

1. 1 Onion, roughly chopped
2. 2 Tomatoes, roughly chopped
3. 1/2 Coconut, grated
4. 2 Teaspoons of roasted chana 
5. 2 Teaspoons of sambar powder

FOR CURRY: 

1. 5 Teaspoons of oil 
2. 1 Teaspoons of Mustard seeds 
3. 1/2 inch Garlic, crushed
4. 2 to 3 no., dry red chillies
5. 1 string, Curry leaves
6. 1 large Onion, chopped
7. 1 Green chilli, finely chopped
8. 1 cup of mixed pulses
9. 1 small bunch of green leaves
10. Bamboo shoots

QUICK LOOK OF RECIPE:

1. Prepare a paste by adding onions, tomatoes, grated coconut, roasted chana, sambar powder and little water. 
2. Pour enough water to cook chopped bamboo shoots in a cooker and cook for 4 to 5 whistles.
3. Heat 5 tsp of oil, add mustard seeds, garlic's, dry red chillies, chopped onions and green chillies. Saute it for 2 minutes.
4. Add Cooked bamboo shoots, mixed pulses and mixed green leaves. Mix all together and cook for 2 minutes.
5. Then add masala paste, saute for 2 minutes.
6. Add salt and water, cook for 10 minutes
7. Bamboo shoot curry is ready to be served.

HOW TO MAKE:

(STEP BY STEP PROCEDURE WITH PHOTOS)

1. For masala paste, Take a jar to add onions, tomatoes, grated coconut, roasted chana and sambar powder. Use a mixture of red chilli powder and coriander powder together in the ratio of 1:1 instead of sambar powder.


2. Add required amount of water ( appx 1 cup ) and grind into a coarse paste.


3. For the curry, firstly peel the rough leaves until you get tender bamboo shoot. Cut off the tip and bottom. Chop them into small pieces and wash 3 to 4 times then Soak them in normal/ cold water overnight. wash 2 to 3 times before use.
now, pour enough water into the pressure cooker. also add overnight soaked and washed bamboo shoots. Cover the lid and cook for 4 to 5 whistles.


4. Drain off the water and rinse 2 times with cold water.


5. Take a pan/ Kadai and heat around 5 teaspoons of oil, when it is heated up add mustard seeds and let it splutter. Add crushed cloves of garlic, dry red chillies and curry leaves and saute it for 30 seconds.



6.  Then add onions and green chillies. Saute it for 2 minutes until onions become translucent. 


7. Add all-purpose green leaves and mixed pulses. Mix all together and cook for 2 minutes.


8. Add the previously grounded masala paste to it and saute for 2 minutes until the raw smell of the masala paste vanishes.


9. Add water according to the thickness of the curry you want and also add rock salt as per your taste. Stir continuously, close the lid and cook for 10 to 15 minutes on low medium flame.


10. After 10 minutes, the bamboo shoot curry is ready to serve.


SERVING IDEAS:

Serve hot with raagi balls, rice or any kind of Indian bread.
